Its hint of blue is a result of a surface heat treatment, providing temporary protection against oxidation. The high iron content promotes caramelization of juices and ensures even heat distribution throughout. You'll achieve excellent baking results: dough won't soften, and pastries will come out golden brown and with a crisp crust. This extremely robust tray remains perfectly flat for consistent baking. Use it with a mat or baking paper, grease well before use, and avoid working with cold ingredients. After use, scrape and brush lightly, grease to protect the iron, and store in a dry place.
