The De Buyer Prima Matera Copper Sauteuse is ideal for fast browning, sautéing, service, display, and open kitchens. The straight low edges ensure good evaporation of moisture and excellent caramelisation of juices. It is made of 90% copper on the outside, providing excellent thermal conductivity. The interior made of AISI 304 stainless steel, so there's no need to retin the copper, and its low proportion at 10% won't change the properties of copper. It features a cold riveted handle in cast stainless steel with a French-style curvature for comfortable and ergonomic use and a modern design. It also has a special induction base. To care for the copper, use a polishing paste, and for the stainless steel, wash by hand. It is compatible with all cooktops, including induction.
