Both versions share an identical blade, with the primary distinction being the type of handle. The KF1802 features a stainless steel handle to which the blade is welded, whereas the KF1902 boasts a full-tang wooden handle. Both knives exhibit a robust choil, particularly near the heel, which enhances their ability to handle bone-cutting tasks. Although the choil on the KF1902's wooden handle is slightly narrower, the performance of both knives are the same. The wooden handle provides added grip, even when hands are wet or oily. Both knives have considerable thickness, which may result in some splitting when used on certain vegetables. They are sharpened to a 20-degree angle per side along the entire blade profile. The balance point for both knives is situated toward the front, facilitating up and down motions. While the blade profile is generally flat, slight curvature at the heel and front prevents unintended digging into the cutting board. Both knives exhibit exceptional durability and excel at cutting meat and small bones, making them suitable for tasks like breaking crab shells or cutting through lobsters.
