The De Buyer Copper Canele Bordelais Fluted Moulds are designed for making authentic Canelés, Bordeaux's famous cakes, adhering to tradition in shape and materials. They not only deliver perfect heat diffusion and caramelization due to their copper composition but also offer outstanding cooking results, thanks to a thick tin layer on the inner surface designed for professional use. These molds, doubling as original design cupcake makers, are also suitable for cold forming. It's important not to heat above 230°C (melting point of tin), and they should not be used in the microwave. Proper care involves regular re-tinning, handwashing the tinned inner surface with a non-abrasive sponge, and cleaning the outer copper surface with a special copper polish, while keeping in mind that they are not dishwasher-safe.
