The De Buyer Blue Steel Lyonnaise Frying Pan is perfect for searing, grilling, and browning minced meat, less delicate fish, and eggs. Its Lyonnaise profile ensures that food easily slides onto a plate. The blue colour of the iron is due to a surface thermal treatment, providing temporary protection against oxidation without any coating. This lightweight pan is easy to handle and ideal for gas stoves. It heats up quickly, so food gets a great caramelized flavour from its juices. With each use, the pan becomes more non-stick naturally. The handle is welded onto the pan and curved for comfortable use. Grease the pan a little before you start cooking, and season it before your first use. For maintenance, deglaze it, rinse with warm water, dry it completely, then lightly oil it before storing in a dry place. Avoid using detergents or dishwashers. Compatible with all cooktops except induction and vitroceramic cooktops.
