The blue colour comes from a surface thermal treatment that provides temporary protection against oxidation without any non-stick coating. Made of iron, the tray withstands high temperatures, promotes the Maillard reaction, and even heat distribution, resulting in golden and crusty pastries. It's an extremely robust tray that remains perfectly flat. For best results, use it with a mat or baking paper and grease it well before use. Avoid using it with cold ingredients.
