The Atlantic Chef Forged Premium Carving Knife is made from German steel 1.4116, which includes carbon, chromium, vanadium, molybdenum, and other elements. Through hardening, tempering, grinding, sharpening, and additional processes, the blade attains a hardness of at least HRC 56. The hand-honed razor-sharp edge ensures long-lasting sharpness, excellent edge retention, easy maintenance, and quick re-sharpening. Forged from a single piece of steel, the bolstered blade offers high stability. The blade and handle are seamlessly joined by machinery, with a 100% seal between them. Overmolded for durability and hygiene, the POM handle is constructed with DuPont® Derlin® for high stiffness and heat resistance, preventing it from melting or warping when exposed to high temperatures during cooking. With its long, narrow blade, the carving knife is ideal for slicing roasts, poultry, and hams. Its length helps achieve clean cuts with minimal effort and provides the reach needed to handle large pieces of meat. Use it with a carving fork (1461F11), to hold the meat steady and in place during the carving process.
