The Atlantic Chef Forged Premium Fillet Knife is made from German steel 1.4116, which includes carbon, chromium, vanadium, molybdenum, and other elements. Through hardening, tempering, grinding, sharpening, and additional processes, the blade attains a hardness of at least HRC 56. The hand-honed razor-sharp edge ensures long-lasting sharpness, excellent edge retention, easy maintenance, and quick re-sharpening. Forged from a single piece of steel, the bolstered blade offers high stability. The blade and handle are seamlessly joined by machinery, with a 100% seal between them. Overmolded for durability and hygiene, the POM handle is constructed with DuPont® Derlin® for high stiffness and heat resistance, preventing it from melting or warping when exposed to high temperatures during cooking. With its thin, flexible blade, the fillet knife glides smoothly along bones and skin, slicing clean fillets with minimal waste, while the sharp, pointed tip excels at cutting around bones and joints. The knife's length provides a good balance between control and reach, making it ideal for filleting small to medium-sized fish and handling delicate meat preparation tasks.
