The Atlantic Chef Forged Premium Boning Knife is made from German steel 1.4116, which includes carbon, chromium, vanadium, molybdenum, and other elements. Through hardening, tempering, grinding, sharpening, and additional processes, the blade attains a hardness of at least HRC 56. The hand-honed razor-sharp edge ensures long-lasting sharpness, excellent edge retention, easy maintenance, and quick re-sharpening. Forged from a single piece of steel, the bolstered blade offers high stability. The blade and handle are seamlessly joined by machinery, with a 100% seal between them. Overmolded for durability and hygiene, the POM handle is constructed with DuPont® Derlin® for high stiffness and heat resistance, preventing it from melting or warping when exposed to high temperatures during cooking. The boning knife is essential for deboning, trimming fat, and handling delicate meat preparation. Its stiff, narrow blade cuts close to the bone, minimizing meat loss, while its sharp, pointed tip excels at maneuvering around bones, joints, and cartilage.
