The Atlantic Chef Japanese Garnishing Knife features a POM handle and a blade made from German steel 1.4116, which is composed of carbon, chromium, vanadium, molybdenum, and other elements. Through hardening, tempering, grinding, and sharpening, the blade attains a hardness of at least HRC 56. The hand-honed razor-sharp edge ensures long-lasting sharpness, excellent edge retention, easy maintenance, and quick re-sharpening. Forged from a single piece of steel, the bolstered blade offers high stability. The blade and handle are joined by machinery with a 100% seal. Overmolded for durability and hygiene, the POM (DuPont® Derlin®) handle has high stiffness and heat resistance, so it would not melt or warp when exposed to high temperatures during cooking. This small, sharp blade is ideal for creating delicate garnishes, peeling, and other fine work, particularly with fruits and vegetables. Its compact size makes control easy, making it a favourite among chefs for tasks that require precision and attention to detail in Japanese cuisine or any culinary style that emphasizes presentation.
