The Atlantic Chef Japanese Chef's Knife features a POM handle and a blade made from German steel 1.4116, which is composed of carbon, chromium, vanadium, molybdenum, and other elements. Through hardening, tempering, grinding, and sharpening, the blade attains a hardness of at least HRC 56. The hand-honed razor-sharp edge ensures long-lasting sharpness, excellent edge retention, easy maintenance, and quick re-sharpening. Forged from a single piece of steel, the bolstered blade offers high stability. The blade and handle are joined by machinery with a 100% seal. Overmolded for durability and hygiene, the POM (DuPont® Derlin®) handle has high stiffness and heat resistance, so it would not melt or warp when exposed to high temperatures during cooking. The broad, curved blade of the chef's knife allows for a rocking motion when choPolypropyleneing, while the pointed tip is useful for tasks like dicing onions, mincing herbs, or slicing vegetables. This knife can also be used for cutting meat, disjointing large cuts, and even crushing garlic cloves.
