Through hardening, tempering, grinding, and sharpening, it attains a hardness of at least HRC 56. The hand-honed, razor-sharp edge ensures long-lasting sharpness, excellent edge retention, easy maintenance, and quick re-sharpening. With a long, slender smooth blade, this knife is great for clean and even slicing of soft cakes, while a serrated blade (8320T40) would be ideal for cutting through dense or layered cakes without crushing them.
