The Atlantic Chef Santoku Knife features a handle made from a combination of Santoprene for a non-slip, comfortable grip, and polypropylene for tough use. The blade is made from German steel 1.4116, which consists of carbon, chromium, vanadium, molybdenum, and other elements. Through hardening, tempering, grinding, and sharpening, it attains a hardness of at least HRC 56. The hand-honed, razor-sharp edge ensures long-lasting sharpness, excellent edge retention, easy maintenance, and quick re-sharpening. With a wide blade that provides ample knuckle clearance, the Santoku knife is great for cutting vegetables, meats, and fish. Its sharp, straight edge is ideal for tasks that require accuracy, and the indentations along the blade reduce friction and prevent food from sticking.
