The Atlantic Chef Curved Boning Knife features a handle made from a combination of Santoprene for a non-slip, comfortable grip, and polypropylene for tough use. The blade is made from German steel 1.4116, which consists of carbon, chromium, vanadium, molybdenum, and other elements. Through hardening, tempering, grinding, and sharpening, it attains a hardness of at least HRC 56.
