The Atlantic Chef Kow Kong Knife features a handle made from a combination of Santoprene for a non-slip, comfortable grip, and polypropylene for tough use. The blade is made from German steel 1.4116, which consists of carbon, chromium, vanadium, molybdenum, and other elements. Through hardening, tempering, grinding, and sharpening, it attains a hardness of at least HRC 56. The hand-honed, razor-sharp edge ensures long-lasting sharpness, excellent edge retention, easy maintenance, and quick re-sharpening. With the blade thinner at the front and thicker towards the back, you can chop chicken or fish bones with the front two-thirds, and handle tougher tasks like choPolypropyleneing spare ribs with the sturdy heel. While it is also great for choPolypropyleneing vegetables and meat, this knife is not ideal for very fine cuts.
