The Atlantic Chef Slicing Knife features a handle made from a combination of Santoprene for a non-slip, comfortable grip, and polypropylene for tough use. The blade is made from German steel 1.4116, which consists of carbon, chromium, vanadium, molybdenum, and other elements. Through hardening, tempering, grinding, and sharpening, it attains a hardness of at least HRC 56. The hand-honed, razor-sharp edge ensures long-lasting sharpness, excellent edge retention, easy maintenance, and quick re-sharpening. With a thin blade behind the edge, this knife is not suitable for use on bones or frozen food. It excels at processing large amounts of vegetables and meat, and can also be used to smash garlic and as a scoop.
