The Atlantic Chef Bone Knife features a handle made from a combination of Santoprene for a non-slip, comfortable grip, and polypropylene for tough use. The blade is made from German steel 1.4116, which consists of carbon, chromium, vanadium, molybdenum, and other elements. Through hardening, tempering, grinding, and sharpening, it attains a hardness of at least HRC 56. The hand-honed, razor-sharp edge ensures long-lasting sharpness, excellent edge retention, easy maintenance, and quick re-sharpening. With a thick blade, this knife tends to weigh more then other knives, and is well-suited for hacking through hard bones.
