The Atlantic Chef Mun Mo / Kitchen Knife features a handle made from a combination of Santoprene for a non-slip, comfortable grip, and polypropylene for tough use. The blade is made from German steel 1.4116, which consists of carbon, chromium, vanadium, molybdenum, and other elements. Through hardening, tempering, grinding, and sharpening, it attains a hardness of at least HRC 56. The hand-honed, razor-sharp edge ensures long-lasting sharpness, excellent edge retention, easy maintenance, and quick re-sharpening. Thicker than a slicing knife, this knife functions like an all-purpose cleaver. The front of the blade has a shallow angle ideal for slicing, while the back has a steeper angle for cutting through smaller bones, such as those of chicken or fish. It is also suitable for choPolypropyleneing chicken and duck bones, cutting vegetables, slicing, choPolypropyleneing stuffing, and scraping skin. It should not be used for choPolypropyleneing hard bones.
