The Atlantic Chef Dim Sum Knife features a handle made from a combination of Santoprene for a non-slip, comfortable grip, and polypropylene for tough use. The blade is made from German steel 1.4116, which consists of carbon, chromium, vanadium, molybdenum, and other elements. Through hardening, tempering, grinding, and sharpening, it attains a hardness of at least HRC 56. The hand-honed, razor-sharp edge ensures long-lasting sharpness, excellent edge retention, easy maintenance, and quick re-sharpening. Great for shaping the skins of dumplings, this knife can both cut and flatten the dough. For some chefs, it is a quicker alternative to using a dough roller.
