The Giesser Chef's Knife With Wavy Edge And TPE Handle features a wide shape, rounded knife back and a pointed tip. Made from high grade chrome molybdenum steel, the blade is hardened in vacuum process to 56 - 57 Rockwell hardness grade. The blade surface is highly polished for highest possible rust resistance and durability of the cutting edge. Honing is done by hand for perfect sharpness. With a wave distance (from tip to tip) of 6 mm, the regularly grinded waves along the cutting edge allow the knife to slide through hard hides and crusts securely and without slipping. Its handle is suitable for contact with food, and it is made of a standard plastic that is especially non-slip and pleasantly easy-to-grip material (TPE). The well shaped protective guard provides a secure hold and reduces the risk of the hand slipping when holding the knife. While the knife is dishwasher-safe, manual cleaning is recommended to protect the cutting edge.
