The blade undergoes meticulous polishing and grinding to ensure that nothing sticks to its surface during use. It is further hardened in a vacuum to achieve a hardness rating of 56-57 HRC, enhancing its overall strength. The final sanding and honing is done by the hand of a master craftsman and guarantees effortless cutting. The knife's silky soft handle fits particularly well and securely in the hand. The handles are firmly connected together with 3 stainless steel rivets. The material is food safe, particularly durable and can even withstand temperatures of up to 200°C (for short-time contact). As an indication of quality, each blade is labelled with an individual and sequential number. While the knife is dishwasher-safe, manual cleaning is recommended to protect the cutting edge.
