The Giesser Universal Knife With Plastic Handle boasts a classic shaped blade with straight blade back. Made from high grade chrome molybdenum steel, the very sharp blade is hardened to 56 Rockwell hardness grade (+/- 1 grade). The very fine blade surface improves the rust resistance and allows the blade to slide easily through the cutting material. The plastic handle offers a smooth grip and is suitable for contact with food. While the knife is dishwasher-safe, manual cleaning is recommended to protect the cutting edge.
